This variety has a small seed cavity. When you scoop out the seeds, more flesh is left when compared to other varieties, including the Roma.
Probably not the best tomato for eating fresh; the flavor is sometimes described as bittersweet. But for canning, drying or for making tomato paste, you'll be hard-pressed to find a better variety.
The Sam Marzano Tomato is an indeterminate variety that produces fruit roughly 4 ounces on average.
